Heirloom Tomato Toast w/ Vegan Aioli & Mozzarella
Heirloom Tomato Toast

Yields: 1-2 servings
Ingredients:
1-2 slices of thick cut sourdough bread
a few spoonfuls of homemade vegan paprika aioli (recipe below!), or other vegan spread of choice (i.e. hummus, baba ganoush, etc.)
sliced of buffalo mozzarella (or sharp cheddar is a yummy alternative)
2-3 thick slices of heirloom tomato
fresh basil leaves
pinch of flaky salt & cracked pepper to taste
1 small pad of butter or 1-2 teaspoon olive oil (for toasting bread)
suggested Garnishes:
olive oil for drizzling (I’m using white truffle olive oil)
pinch of red pepper flakes
avocado
jammy egg
Directions:
Step 1
On the stove top on medium-high, heat a heavy bottom pan (large enough to accommodate sliced bread) with small pad of butter or olive oil; allow bread to lightly brown and crisp up on each side (about 2 min per side), and sprinkle a pinch of salt once bread is toasted to your liking.
Step 2
Slice your tomatoes, mozzarella, and gather the remaining ingredients. Slather toasted bread with a generous amount of paprika aioli (or other spread of choice); add mozzarella, sliced tomato, fresh basil leaves, drizzle of oil, pinch of salt & pepper, and additional garnishes of choice.
Vegan Paprika Aioli

Yields: about 1 1/2 cups
Ingredients:
200g firm tofu (about 1/2 of a 14oz container)
60g avocado (about 1/2 of a small avocado)
1/3 cup olive oil
2 Tbsp fresh lemon juice
1 Tbsp apple cider vinegar
3 tsp paprika (plus more if needed)
3 cloves garlic, grated
2 tsp spicy mustard
1/2 tsp salt (smoked sea salt if you have it! I used this brand.)
pinch of black pepper
Directions:
Step 1
Add all ingredients into a blender and blend for 1 minute; use a spatula to scrape down the sides, then blend again for another 2-3 minutes to achieve that creamy rich consistency.
