Tahini Poppy & Maftoul Salad
Our latest salad creation is served with a savory Tahini Poppy Dressing.
Our greens of choice include:
Baby leafy greens: mizuna, cabbage, kale, arugula, mustards
Shoots: radish shoots, sunflower shoots & pea shoots

tahini poppy dressing

Yields: 1 cup
Ingredients:
1/3 cup tahini
11/2 lemons, juiced (about 1/4 cup)
1 tablespoon maple syrup
3-4 ounces hot water
1 clove garlic, finely minced
1/4 teaspoon salt
1 teaspoon poppy seeds
Directions:
Whisk together tahini, lemon juice, maple syrup, salt, garlic and poppy seeds in a medium sized mixing bowl. Slowly whisk in hot water until desired consistency is reached. If using a blender to combine ingredients, stir in poppy seeds after blending. Store in the refrigerator up to 5 days or longer.
