Tahini Poppy & Maftoul Salad

Our latest salad creation is served with a savory Tahini Poppy Dressing.

Our greens of choice include:

  • Baby leafy greens: mizuna, cabbage, kale, arugula, mustards

  • Shoots: radish shoots, sunflower shoots & pea shoots

Suggested salad toppers:

  • Maftoul

  • Green onions

  • Radish

tahini poppy dressing

Yields: 1 cup

Ingredients:

  • 1/3 cup tahini

  • 11/2 lemons, juiced (about 1/4 cup)

  • 1 tablespoon maple syrup

  • 3-4 ounces hot water

  • 1 clove garlic, finely minced 

  • 1/4 teaspoon salt

  • 1 teaspoon poppy seeds

Directions:

Whisk together tahini, lemon juice, maple syrup, salt, garlic and poppy seeds in a medium sized mixing bowl. Slowly whisk in hot water until desired consistency is reached. If using a blender to combine ingredients, stir in poppy seeds after blending. Store in the refrigerator up to 5 days or longer.
