Hummus, Mixed Greens, & radish Toast

This loose recipe can be modified with almost any ingredients you have laying around your house or fridge.

INGREDIENTS:

  • Mixed greens of choice

  • 1-2 tbsp tahini poppy dressing

  • Snack vehicle of choice (i.e. toast, gluten free cracker, or english muffin)

  • Hummus (or other plant based dip, such as: baba ganoush, tahini, roasted red pepper tapenade, etc.)

  • Herbs of choice (i.e. dill, parsley, mint, etc.)

  • Sliced reddish or apples

SUGGESTED TOPPERS:

  • Sunflower shoots

  • Avocado

  • Sliced apples

(Add your favorites, or add all!)

DIRECTIONS:

Step 1

Gather ingredients. Layer your snack vehicle with a generous amount of hummus or other plant based dip. Think of the spread as the glue that will hold your toast together. Toss greens and herbs in Tahini Poppy dressing, then layer greens on top of the spread.

Step 2

Top with thinly sliced radishes or apples, seeds and/or nuts of choice, and a dash of salt and pepper. Lastly, drizzle with a teaspoon of olive oil.

Simple as that. Enjoy!
