Herbed Green Apple Grain Bowl w/ Red Onion & Radish

Yields: 2 servings

Do ahead (optional): Make our Almond Ginger salad dressing with this recipe.

Ingredients:

  • 1 cup brown rice

  • 1 cup mixed greens of choice

  • 1-2 Tbsp almond ginger dressing OR other dressing of choice

  • 1 small radish, thinly sliced

  • 1/2 green apple, thinly sliced

  • 1/4 cup red onion, thinly sliced and chopped

  • 1/3 cup mint, coarsely chopped

  • 1/3 cup dill, coarsely chopped

  • 1 tsp lemon zest

  • salt & pepper to taste

Directions:

Step 1
Prepare brown rice on the stove top, or with a rice cooker. If you’re using the stove top method and need future instruction, check out this blog post.

Step 2
While your rice is simmering, you can begin chopping your produce: thinly slice the green apple and radish. Coarsely chop the fresh herbs. For the onion, finely chop half and leave the other half sliced, as shown below. Reserve a few pieces of apple, onion, and radish to garnish the bowl. Place the remaining chopped produce into a large bowl, toss in mixed greens, add 1-2 Tbsp almond ginger dressing (or other dressing of choice- preferably on the sweet side), lemon zest, and salt & pepper to taste (about ½ tsp of both).

Step 3
Once the brown rice is prepared and still hot, toss it in with the bowl of chopped fruits, veggies, herbs, and dressing. Combine all ingredients. Portion out between two separate bowls (or save half for later), top with reserved apple, onion and radish. Serve & enjoy!
