Micro red cabbage has been proven to contain the highest levels of vitamin C in comparison to other commonly grown microgreens, and 6 times the amount of mature red cabbage. If you think that is impressive, wait until you hear about red cabbage’s beta-carotene levels! Also known as provitamin A, beta-carotene is a fat-soluble antioxidant that protects our bodies from free radicals. Red cabbage micros also have high levels of lutein and zeaxanthin carotenoids which reduce the risk of chronic eye diseases. This microgreen is on par with carrots and sweet potatoes which are well known for their beta-carotene richness.
In addition to the health benefits of red cabbage, we choose to grow these greens for their mild flavor which pair well with some of our spicy micros like mustard and radish greens.
