Luscious Lemon Salad with Pears, Black Rice & Pumpkin Seeds

Our latest salad creation is served with a luscious lemon dressing.

Our greens of choice include:

  • Baby leafy greens:arugula, mizuna, mustards, red cabbage, kale, micro onion, and micro radish

  • Shoots: pea shoots, sunflower shoots, radish shoots

Suggested salad toppers:

  • pumpkin seeds

  • pears

  • black rice

Luscious Lemon Dressing

Yields: 1 ½ cup

Ingredients:

  • ¼ cup apple cider vinegar

  • 2 Tbsp dijon mustard

  • ¼ cup raw cashews

  • ½ cup olive oil

  • 2 lemons, juiced and zested 

  • 2 Tbsp water

  • 1 clove garlic

  • 1 Tbsp + 1 teaspoon agave

  • 2 tsp salt

  • ¼ tsp pepper

  • 1 Tbsp nutritional yeast

  • 1 Tbsp fresh oregano or 2 teaspoons dried oregano

Directions:

Place all ingredients in a high-powered blender and blend until smooth. If using a regular blender, soak cashews in warm water for 4 hours, then drain prior to combining with all other ingredients. Scrape the sides of the blender with a rubber spatula to ensure all of the cashews are blended in. Add more water to reach desired consistency.
