Luscious Lemon Salad with Pears, Black Rice & Pumpkin Seeds

Baby leafy greens:arugula, mizuna, mustards, red cabbage, kale, micro onion, and micro radish
Shoots: pea shoots, sunflower shoots, radish shoots

Luscious Lemon Dressing

Yields: 1 ½ cup
Ingredients:
¼ cup apple cider vinegar
2 Tbsp dijon mustard
¼ cup raw cashews
½ cup olive oil
2 lemons, juiced and zested
2 Tbsp water
1 clove garlic
1 Tbsp + 1 teaspoon agave
2 tsp salt
¼ tsp pepper
1 Tbsp nutritional yeast
1 Tbsp fresh oregano or 2 teaspoons dried oregano
Directions:
Place all ingredients in a high-powered blender and blend until smooth. If using a regular blender, soak cashews in warm water for 4 hours, then drain prior to combining with all other ingredients. Scrape the sides of the blender with a rubber spatula to ensure all of the cashews are blended in. Add more water to reach desired consistency.
