Spiced Carrot Marmalade

Yields: 8oz
Ingredients:
2 cup shredded carrots (about 2 carrots)
2 cups sugar (I’m using 1 cup coconut sugar, 1 cup less processed pure cane granulated)
2 cup water
1 lemon, juice & zest
1 blood orange, juice & zest
1 tsp ground cinnamon
1 tsp ground cardamom
Directions:
Step 1
In a large pot on the stovetop, bring water, orange zest & juice, lemon zest & juice to a boil, then reduce the heat and simmer for 15 minutes.
Step 2
Add the shredded carrots, sugar, spices, and simmer for 45-60 minutes, stirring frequently. When the liquid has reduced to half (and only a little sugar syrup pools at the bottom of the pan when dragging a spoon across the bottom), remove from heat.
Step 3
After it cools down, carefully spoon it into a jar, preferably wide mouthed, and store in the fridge in an airtight container for up to 2 weeks
